YOUR GRANDMOTHER'S PEACH COBBLER | |
1 1/2 c. of all purpose flour 1/2 tsp. salt, sifted into the flour 1/2 c. of vegetable shortening, blended into the flour 5 to 6 tbsp. cold water added to make a light dough Place dough on floured board, knead lightly. Roll a portion of the dough to cover the bottom of 8x12 baking dish, make the balance of the dough into 1 or 1 1/2 inch strips for the top. 1 qt. of peeled sliced, fresh peaches or (frozen) 3/4 to 1 c. of sugar 1/2 c. of flour, blend with the sugar 1 stick of butter Place about 3/4 of mixed flour and sugar on the bottom dough of the dish, add the peaches and balance of sugar mixture. Chip up the butter, add 1/2 cup of water, finish by placing strips of dough, length and across. Place in preheated oven 350 degrees, for 30 minutes or until juice bubbles up and the crust is nice and brown. |
