PEACH BERRY COBBLER | |
1 tbsp. cornstarch 1/4 c. brown sugar 1/2 c. cold water 2 c. sugared sliced fresh peaches 1 c. fresh blueberries 1 tbsp. butter 1 tbsp. lemon juice If peaches are frozen, thaw and use juice for the water. Mix cornstarch, brown sugar, and water. Add peaches and blueberries. Cook, stirring until the mixture thickens. Remove from heat and add butter and lemon juice. Put mixture in 8-inch square pan. 1/2 c. sugar 1 1/2 tsp. baking powder 1/2 tsp. salt 1/2 c. milk 1/4 c. butter, softened 2 tbsp. sugar 1/4 tsp. nutmeg Sift together flour, sugar, baking powder, and salt. Add milk and butter. Beat until smooth and pour over fruit. Mix sugar and nutmeg. Sprinkle over top. Bake at 350 degrees for 30 minutes. If you double recipe, it fits in a 9x13 inch pan. |
