BREAKFAST EGG CASSEROLE 
1/4 c. butter
6 med. potatoes
12 slices fried bacon
1 c. Cheddar cheese, shredded
1/4 tsp. salt
8 eggs

Melt butter in large frying pan. Peel and slice potatoes--fry in butter until golden brown. Place potatoes in buttered 9 x 13 inch dish. Crumble and sprinkle fried bacon over potatoes. Stir together eggs, salt and cheese. Pour over bacon and potatoes. Bake at 350 degrees for 25 to 30 minutes or until set.
