ZUCCHINI BREAD 
3 eggs
1 1/2 c. sugar
1 c. oil
2 c. peeled and grated zucchini
2 tsp. vanilla
1 tsp. rum flavoring
3 c. flour
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
1 tsp. nutmeg
2 tsp. cinnamon
1/2 c. chopped nuts
1/2 c. raisins

Grease and flour 2 loaf pans. Beat eggs until foamy. Gradually add sugar to eggs then add oil, zucchini, vanilla and rum flavoring. Mix well with beater. Sift dry ingredients together. Add dry ingredients and nuts to egg mixture. Divide batter into 2 loaves. Bake 1 hour in 325 degree oven.
