1 lb. Italian sausage 1 med. onion, chopped 1 clove garlic, crushed 1 tbsp. dried basil 1/2 tsp. salt 16 oz. can whole tomatoes 8 oz. can tomato sauce 1 (6 oz.) tomato paste 8 oz. lasagna noodles (10 to 12) 3 c. cottage cheese, creamy 1/2 c. grated Parmesan 2 tbsp. parsley flakes 2 beaten eggs 1/2 tsp. pepper 1 lb. sliced Mozzarella cheese Brown sausage and onion. Break up sausage and drain fat. Add garlic, salt, tomatoes - not drained, sauce and paste. Stir, cutting the tomatoes into chunks with edge of spoon. Simmer uncovered for 30 minutes, stirring occasionally. Cook noodles, drain, rinse, and drain again. Combine cheeses, parsley flakes, eggs, salt and pepper. Put 1/2 noodles in 9 x 13 inch pan. Spread with 1/2 cheese filling, top with 1/2 Mozzarella cheese and 1/2 the meat sauce. Repeat. Bake 45 minutes at 350 degrees. Let stand 10 minutes to firm slightly. |
