1ST PRIZE LEMON MERINGUE CAKE 
1 pkg. yellow or lemon cake mix
1 egg
1/2 c. butter

Mix well and press in a 9 x 13 inch pan.

FILLING:

1 1/3 c. sugar
1/4 tsp. salt
1/2 c. cornstarch
1 3/4 c. water
2 tbsp. butter
1/4 c. lemon juice
1 tbsp. lemon peel

Cook sugar, salt, cornstarch and water to boiling. Remove from heat. Add hot mixture to 4 beaten egg yolks. Return to heat. Cook until thick. Add butter, lemon juice and lemon peel. Pour over cake in pan. Beat 4 eggs, 1/4 teaspoon cream of tartar and 1/2 cup sugar. Bake at 350 degrees in a 9 x 13 inch pan for 25 minutes. Cool. Refrigerate.
