SALMON LOAF 
2 (16 oz.) cans salmon
2 eggs
3 c. cracker crumbs
Milk
2 tsp. lemon juice
2 tsp. chopped onion
1/4 tsp. salt
1/4 tsp. pepper

Flake and remove bones and skin in the salmon. Blend in the eggs. Stir in liquid from salmon plus milk to make 1 1/2 cups. Add cracker crumbs, lemon juice, onions, salt and pepper. Mix well. Spoon lightly into greased loaf pan. Bake at 350 degrees for 45 minutes.
