FRIED CHICKEN 
3 lbs. chicken pieces, rinsed and patted dry
1 c. water
2 tsp. salt
1 tsp. pepper
2 c. flour
2 drops yellow food coloring
Vegetable oil for frying

Fill 12 inch frying pan about half full with vegetable oil. Heat oil to about 325 degrees. In 1 bowl, combine water, 1 teaspoon salt, 1/2 teaspoon pepper, 1 cup flour, and the food coloring. In separate bowl, mix together 1 cup flour, 1 teaspoon salt, and 1/2 teaspoon pepper. Dip chicken in batter, then roll in dry mixture; shake off excess flour. Fry about 8 minutes on each side, then drain well on paper towels.
