SWEET POTATO BALLS 
Pineapple chunks in juice
Corn flake crumbs
Sweet potatoes

Boil potatoes, drain and mash them. Season with butter, salt and pepper then add pineapple juice to make a soft ball. Roll between your palms with a piece of pineapple in center. Cover with corn flake crumbs then roll in melted butter. Place on baking sheet to brown about 350 to 400 degrees. Reheat just before serving. Can be made in morning of day you are using them.
