PUMPKIN FLAN 
1 2/3 c. sugar
3 c. light cream
2 c. strained pumpkin
1 tsp. salt
1/4 c. Jamaica rum
6 eggs

Put a cup of granulated sugar into a round, deep oven-proof dish and allow it to melt over a low heat stirring constantly. When it is an even deep amber, remove from heat and tip quickly in all directions so that the sides and bottom of the dish will be coated. In the meantime, scald cream, add pumpkin, salt, remaining 2/3 cup of sugar, rum and eggs, slightly beaten.

Pour this mixture into the dish, place it in a pan of water and bake at 350 degrees for an hour, or until a knife inserted into the center comes out shining clean. Allow to cool, then invert on a round serving dish. The bottom will be glorious shiny brown. This may be served chilled or warm, flaming with rum. Serves 6.
