BLACKBERRY CAKE | |
1 c. butter 2 c. sugar 4 eggs, separated 3/4 c. sour milk or buttermilk 2 tsp. baking soda 3 c. flour 2 c. canned berries 1 tsp. nutmeg 2 tsp. cinnamon 1/2 tsp. cloves Cream butter, sugar and beat egg yolks. Add spices to flour and sift. Dissolve soda in buttermilk and add alternately with flour to the egg mixture. Fold in berries. Beat egg whites until stiff and fold in. This makes 2 (10") layers or 3 (9") layers. Grease and flour pans. Bake in oven at 350 degrees for 25 or 30 minutes until cake tester comes out clean. (I use a toothpick.) This can then be frosted with a caramel frosting. |
