MOCK CREAM CHEESE SPREAD 
16 oz. non-fat ricotta (or non-fat cottage cheese)
8 oz. reduced fat cream cheese (Neufchatel)
1 tbsp. ground garlic or garlic powder
1 tsp. cracked black pepper
1 tbsp. lemon juice

Combine ricotta and cream cheese, garlic, pepper and lemon juice in food processor or blender; process until smooth.

Variation: Try adding fresh herbs such as basil and dill.
