SWEET POTATOES IN ORANGE CUPS 
4 lg. sweet potatoes
4 oz. pkg. cream cheese
1/2 c. toasted pecans, chopped
1 1/2 tbsp. orange peel, finely grated
1 1/2 tsp. cinnamon
2 tsp. brown sugar
3 tbsp. sugar
8 orange shells

Bake sweet potatoes 45 minutes in a 400 degree oven. Cool to handle. Remove skins. Blend yam pulp and remaining ingredients in large bowl with mixer at low speed. Fill orange shells and bake in 400 degree oven for 20 minutes until warm and golden.
