SWEET POTATOES IN ORANGE CUPS 
3 sm. sweet potatoes
1 1/2 tsp. cinnamon
1 egg, beaten
2 tbsp. butter
2 tbsp. fresh orange juice
Pinch of salt
2 oranges
4 maraschino cherries or 4 marshmallows

Cut oranges in half and remove pulp and membrane to make clean shells. Cook sweet potatoes, peel and mash. Add cinnamon, egg, butter, orange juice and salt. Fill the orange shells with potato mixture, top with marshmallow or cherries and bake for 15 minutes at 400 degrees. (Start them at room temperature.)

These are lovely for Thanksgiving, Christmas, or very special dinners. Can be made ahead and refrigerated before heating. Serves: 4.
