SWEET POTATO SALAD 
5 c. water
1 1/2 lbs. sweet potatoes
2 med. stalks celery, thinly sliced, about 1 c.
1 sm. onion, thinly sliced
1 med. orange, peeled and sliced
1/2 c. mayonnaise
1-2 tbsp. orange or pineapple juice
1/2 tsp. dry mustard
1/2 tsp. grated orange peel
1/4 tsp. salt
1/4 tsp. ground ginger
1/8 tsp. pepper
Lettuce leaves

Heat water to boiling; add potatoes. Heat to boiling and reduce heat. Cover and simmer until tender 30-35 minutes. Drain potatoes; slip off skins. Cut potatoes into 1/2-inch cubes. Add celery, onion and orange. Mix remaining ingredients except lettuce and pour on salad. Stir to blend. Refrigerate at least 2 hours. Serve in lettuce lined bowl.
