SAVORY BEEF STEW 
2 lbs. stewing beef (cut into 2" cubes)
1/4 c. cooking oil
1 (1 lb.) can or jar tomatoes, cut up
3 tbsp. quick tapioca
1 (10 1/2 oz.) can condensed beef broth or 1 pkg. dry onion soup mix + 10 1/2 oz. water
1 clove garlic, minced
1 tbsp. parsley flakes
2 1/2 tsp. salt
1/4 tsp. pepper
1 bay leaf
6 carrots, pared & cut in strips
3-4 potatoes, pared & cut in strips
1/2 c. sliced celery

Brown beef cubes in oil, add all other ingredients except vegetables. Bring to a boil, turn into 3 quart casserole. Cover. Bake in 350 degree oven 1 1/2 hours or until meat is tender. Add vegetables and bake 1 hour or until veggies are tender.
