SUSAN'S MILE HIGH CARROT CAKE 
1 1/2 c. Wesson oil
2 c. sugar
5 eggs
2 1/4 c. flour
2 tsp. baking powder
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
3 c. grated carrots
1 c. chopped nuts

In a large bowl mix oil and sugar. Add eggs one at a time. Sift together next 5 ingredients and add to oil mixture. Blend in carrots and nuts. Bake in 3 greased and floured cake pans at 325 degrees for 40 to 50 minutes.

ICING:

1 (8 oz.) pkg. cream cheese
1 stick butter
2 tsp. vanilla
1 box confectioners' sugar

Place all ingredients in mixer and beat until smooth.
