EXOTIC CHICKEN SALAD 
4 c. cooked chicken
1 c. celery
2 c. seedless grapes or
1 c. water chestnuts
1 c. pineapple chinks
1 c. slivered almonds
1 1/2 c. mayonnaise blended with
1/2 tsp. curry powder
1 tbsp. soy sauce
1 tbsp. lemon juice

Mix first 5 ingredients together. Blend together last 3 items. Mix mayonnaise sauce with chicken mixture. Chill several hours. Serve on lettuce leaf. Garnish with coconut or slivered almonds. Option: Chill mayonnaise sauce several hours then add rest of salad ingredients just before serving.
