CHRISTMAS RELISH 
1 dozen red peppers
1 dozen green peppers
1 dozen onions
2 lg. bunches celery
2 c. white sugar
3 c. vinegar
4 tbsp. salt

Remove seeds from peppers and chop finely. Chop onions and mix with peppers. Cover with salt and boiling water and let stand 30 minutes. Drain peppers and onions, mix in chopped celery, sugar and vinegar. Boil and seal while hot.
