WILD RICE WALDORF SALAD 
2 c. cooked wild rice, chilled (2/3 c. uncooked)
2 lg. red apples, unpeeled & diced
1 tbsp. lemon juice
2 tbsp. brown sugar
2 stalks celery, thinly sliced
1/2 c. plain non-fat yogurt
1/4 c. low fat mayonnaise

Toss diced apples with the lemon juice and brown sugar. Stir in celery and wild rice. Blend yogurt and mayonnaise and toss with salad ingredients. Chill. Serves 6.
