BROCCOLI CHEESE CASSEROLE 
2 pkgs. frozen chopped broccoli, thawed
1 c. Minute Rice
1/4 c. butter
1 med. onion, chopped
1/2 lb. Velveeta cheese, cubed
1 can cream of mushroom soup
1 sm. can evaporated milk

Melt butter and saute onion until translucent. Add soup, milk and cheese and cook until smooth, stirring frequently. Add rice and broccoli and pour into 2 quart casserole. Bake for 40 to 50 minutes at 350 degrees.
