MARTHA'S CHICKEN 
Chicken breasts
Potatoes
Carrots
Mushrooms
Oni on slices
Red cooking sherry (like Regina)
Heavy foil

Place chicken breast, bony side up, on a generous piece of heavy foil. Fill cavity with thinly sliced potatoes, thinly sliced carrots and onions. Add a few mushrooms. Dot with dab of butter and salt and pepper to taste.

Pour 1 tablespoon of red cooking sherry over top. Fold and seal each chicken breast individually, making sure foil is tightly sealed. Bake 2 hours at 350 degrees.
