SHRIMP AND VEGETABLE TORTELLINI | |
This recipe is a sure hit - healthy and flavorful! 1 package of Buitoni Tortellini - any kind 1 bunch of asparagus 1 pound of uncooked shrimp 1/2 pint cherry tomatoes 8 oz. mushrooms - washed and chopped 1/2 onion 1 package of dry pesto mix olive oil Chop onion and mushrooms and place in skillet with 2 tablespoons olive oil - cook for 5 or 6 minutes. Cook Tortellini according to package directions. Chop off ends of asparagas. Add asparagus and tomatoes to skillet once the onion and mushrooms have cooked (I grill the asparagus and cherry tomatoes for added flavor). Boil shrimp until done, drain and peel. Cook pesto according to package directions. Add all ingredients and toss with 2 tablespoons of olive oil. Optional: top with shredded Parmesan cheese. Submitted by: Ann Wolf |
