APRICOT CASSEROLE 
2 (28 oz.) cans peeled apricots
2 lb. light brown sugar
1 lb. box Ritz crackers, crushed
1 lb. butter, butter is better

Drain apricots. In a greased casserole dish, layer (in order) apricots, brown sugar, crushed crackers, and lumps of butter (dot thickly with butter). Repeat layers to top of dish. Bake slowly at 300 degrees for 1 hour, until thick, and crusty on top. Serves 10-12.

This is an unusual dish which is excellent with turkey or chicken.
