MUFFINS 
Makes 1 dozen muffins.

1 c. + 2 tbsp. flour
2 tbsp. baking powder
1/4 tsp. salt

Mix together.

1 1/3 c. cottage cheese
2 eggs, beaten
2 tbsp. oil
3 tbsp. honey

FILLING:

4 tbsp. low calorie jam

Spray 12 muffins tin with Pam. Fill each 1/2 with muffin mixture. Evenly divide 1 teaspoon jam on top of each muffin, then rest of mixture. Bake at 400 degrees F for 20 minutes.
