DOUBLE TOMATO RELISH 
Use as condiments for grilled meat, fish or chicken.

1/4 c. finely chopped drained oil packed sun dried tomatoes
1/2 lb. finely chopped plum tomatoes
1 minced clove of garlic
2 tbsp. minced fresh basil or 1/2 tsp. dried basil mixed with 2 tbsp. fresh parsley
1 1/2 tbsp. olive oil
1 tsp. balsamic vinegar or red wine vinegar
1/4 tsp. Tabasco

In a medium bowl combine sun-dried tomatoes, plum tomatoes, garlic, basil, olive oil, balsamic vinegar and Tabasco. Cover and let stand at room temperature at least 15 minutes before serving.

Spoon 1/4 cup or so on top of each grilled meat chop or fish steak, or grilled chicken.
