1/2 c. butter 1 clove garlic 2 tsp. chives 2 tsp. parsley 1/2 tsp. salt 1/2 tsp. rosemary 1/8 tsp. pepper 1 egg, beaten 1 tbsp. water Salad oil for frying 1/4 c. flour About 4 lbs. chicken breasts Mix seasonings with butter in bowl. Blend egg and water. Pound chicken breasts until 1/4 inch thick. Lay pat of butter mixture on each pieces of breast and roll up tight; secure with string. Melt oil in skillet to 370 degrees. Dip chicken in flour, then in egg mixture then in flour. Fry 15 minutes or longer in oil. Drain on paper towel. |
