POTATOES AND DUMPLINGS | |
3 eggs 6 potatoes 1 1/2 qts. Half and Half 1/2 onion 1/2 stick butter 1/4 c. flour Salt and pepper Peel and cut potatoes into small bite size chunks, then boil until tender. At the same time, mix three eggs, 1/4 cup flour and salt and pepper to taste. Also at the same time, cut 1/2 onion into very small bits, and cook in butter until slightly brown. Egg mixture should be mixed to the point of being somewhat dry so that it doesn't stick to the side of bowl. Add more flour if needed. Drain potatoes, but save the used water from potatoes. Boil the used water and drop small pieces of egg mixture into water and boil until pieces become fat. Mix the boiled egg pieces with the potatoes into cooking pot and combine with Half and Half. Half and Half should fill the pot to just below the top of the potatoes and egg pieces. Bring to a boil, then add the cooked onions and butter. Simmer until liquid is thick. Add a premixed flour-water mixture if needed to thicken liquid. Adjust ingredients to meet needed servings. |
