BLUEBERRY MUFFINS 
2 c. vanilla ice cream, softened
2 c. self-rising flour
3 tbsp. sugar
Cinnamon sugar, well mixed
2 c. blueberries

(2 1/2 tablespoons sugar and 1/2 tablespoon cinnamon).

Mix ice cream and flour together. Gently fold in blueberries. Put in greased muffin tins (can be large or small) filling up to about 3/4 full. Sprinkle with sugar and cinnamon mixture. Bake for 12 to 15 minutes at 400 degrees.
