BORSCH WITH POTATOES 
2 c. sliced beets, canned or cooked
Salt
2 med. potatoes, boiled
2 eggs
2 c. water
2 tbsp. sugar
3 tbsp. vinegar
4 tbsp. sour cream

Combine in saucepan beets, water, sugar, and salt. Bring to boil and reduce heat. Cook 10 minutes and add vinegar and bring to boil. Break eggs into a bowl and add sour cream and beat together with rotary beater. Add small amount of beet liquid, beating well. Serve in bowls with sliced beets and fluffy boiled potatoes.
