SAVORY BROCCOLI CORN CASSEROLE | |
2 (10 oz.) pkgs. frozen chopped broccoli 1/2 c. butter 2 c. crumbly herb seasoned stuffing 1/4 tsp. poultry seasoning 17 oz. can cream style corn 2 tsp. instant minced onion or fresh 1/2 tsp. salt 1/8 tsp. pepper 2 eggs In a 3 quart saucepan bring 2 cups water to boil. Add frozen broccoli and heat just enough to break it apart with a fork, about 2 to 3 minutes and drain well. Then set aside. In a 2 quart saucepan melt butter and add stuffing and poultry seasoning. Toss and combine, reserve 1/2 cup buttered stuffing mix for topping. Drain broccoli and add corn, onion, salt and pepper. Stir in eggs, 1 at a time. Add 1 1/3 cups buttered stuffing; stir to combine. Pour mixture into 2 quart ungreased casserole. Sprinkle with reserved stuffing mix. Bake, uncovered near center of oven at 375 degrees for 30 to 40 minutes until knife inserted 2" from edge of casserole comes out clean, though moist. Allow casserole to set 5 to 10 minutes before serving. |
