CHICKEN FAJITAS 
2 boneless chicken breasts cut into 1/2" strips (or 8-12 oz. chicken tenders)
1 lg. bell pepper, seeded & sliced
1 lg. onion, sliced
2 tsp. cooking oil (or use a non stick spray)
2 tbsp. chili powder
1 tsp. cumin powder
Salt & Pepper to taste
4 lg. flour tortillas
Grated cheese
Sour cream
Shredded lettuce
Diced tomatoes
Mexican salsa

In large skillet, saute chicken until almost done. Add bell pepper and onions, and sprinkle chili powder and cumin over all ingredients. Continue cooking until chicken is done and vegetables are at desired doneness. Serve on large flour tortillas with grated cheese, sour cream, guacamole, shredded lettuce, diced tomatoes, salsa and diced black olives.

For more flavorful chicken, marinate chicken breast in Italian dressing overnight. Or grill the whole chicken breast on the bar-b-que.
