CREAM SHORTCAKE 
2 cups flour
3 tbsp. butter
1 tsp. salt
1 tbsp. sugar
1 egg, beaten
1 cup sour cream
1 tsp. baking soda
1 tbsp. water

Preheat oven to 400°F.

Whisk together flour, salt and sugar. Cut in butter using 2 knives or a pastry blender.

In a separate bowl, beat eggs slightly and add sour cream. Combine this with the flour mixture.

Dissolve 1 tsp. baking soda in 1 tbsp. water and add to batter.

Roll lightly into 2 round sheets. Place on pie pans or large cookie sheets and bake for 20-25 minutes in a preheated 400°F oven.

This is a delicious crust for making fruit short cakes; top with strawberries or other fruits in syrup and whipped cream.
