WILD RICE SOUP 
STOCK:

1 turkey carcass
1 smoked ham bone
1 med. onion, sliced
3 tsp. Maggi or Knorr Swiss seasoning
Salt & pepper to taste
1 bay leaf
1/4 celery stalk, chopped
1 1/4 qts. water
2 carrots, chopped

SOUP:

1/4 c. butter
1/4 c. raw wild rice or 2 c. cooked wild rice
1 pt. whipping cream
1 c. onion, diced
1 c. celery, diced
1 c. carrots, diced
2 tsp. arrowroot

For Stock: Combine the above and bring to a boil. Simmer 1 1/2 hours. Strain.

Soup: Melt butter in heavy pan and saute above ingredients. Add soup stock, simmer 1 1/4 hours. If necessary thicken with 2 teaspoons arrowroot, dissolved in small amount of cream just before serving.
