ZUCCHINI BREAD 
1 c. oil
2 c. sugar
3 eggs
1 tsp. vanilla
1 tsp. lemon juice
4 tbsp. wine
3 c. flour
1 1/2 tsp. baking soda
1 tsp. baking powder
2 c. grated zucchini (leave skin on)
Walnuts
2 tsp. cinnamon

Mix oil, sugar and eggs, vanilla, lemon and wine. Add dry ingredients. Add zucchini and nuts. Bake in 2 large greased loaf pans at 325 degrees for 1 hour.
