NALESNIKI (THIN PANCAKES) 
1/2 c. all-purpose flour
1 egg
1 egg yolk
1/2 c. milk
1/8 tsp. salt

Combine flour, egg, and egg yolk in a small bowl of electric mixer. Add milk and salt. Beat at low speed 2 minutes. Heat a small heavy skillet. Brush bottom with butter.

Pour about 2 tablespoons batter into skillet; at once tilt skillet to spread batter evenly over bottom of skillet. When edges are dry, turn pancake and cook other side. Repeat until all batter is used. Spread with jelly or apple butter and roll up.
