CARAMEL TOPPED OATMEAL CAKE 
1 1/2 c. boiling water
1 c. quick Mother Oats
1/2 c. butter or oil
1 c. brown sugar, packed
1 c. granulated sugar
2 eggs
1 tsp. vanilla
1 tsp. baking soda
1 1/2 c. all-purpose flour
1/2 tsp. salt
1 tsp. cinnamon

Pour boiling water over oatmeal and let stand 20 minutes. Cream together butter, both kinds sugar. Add eggs, vanilla, oatmeal mixture, mixing well. Add flour, soda, salt and cinnamon and mix well. Turn batter into buttered pan, size 9x13 and bake in oven, 350 degrees; glass pan 325 degrees; 30-40 minutes.

While baking, mix topping: 1/2 c. brown sugar, well packed 1/3 c. milk 1 c. coconut 1/2 c. chopped nuts

Spread topping on finished cake and put under broiler until mixture browns and bubbles.
