PORK & PEPPERS 
1 lb. boneless pork
3 onions
2 green bell peppers
2 red bell peppers
1 tbsp. tomato paste
1 c. beef stock
1 tbsp. paprika
2 tbsp. oil (olive oil is best)

Place pork in freezer while you prepare the vegetables, it will be easier to slice in thin strips. Cut onions in half and slice, break slices apart. Cut peppers into long, thin slices. Place vegetables in hot oil. Saute vegetables until they cook down (approximately 10 minutes). Pull vegetables to one side and add pork. Brown pork. Add vegetables, beef stock, tomato paste, paprika and salt & pepper to taste. Cover and simmer 30-40 minutes. Serve with wide egg noodles.
