PICK-A-BOO PEACHCAKE 
2 cans peach slices, drained
2 eggs
1 c. sugar
1/3 c. milk
1 tsp. vanilla
2 c. flour
2 tsp. baking powder
1 tsp. salt

TOPPING:

1 c. reserved batter
1/2 c. sugar
1/2 c. dairy sour cream
1/4 tsp. almond extract

Drain peaches, set aside. Beat eggs, gradually add sugar, beat until thick. Blend in milk and vanilla. Blend in dry ingredients. Pour batter into 12 x 8 inch pan or 9 x 13 inch pan. Reserve 1 cup batter for topping. Arrange peaches on top. Spread topping over peaches. Bake at 350 degrees for 50 to 55 minutes.
