MOTHER HIMES' LEMON CHIFFON PIE 
1 baked pie shell
1 c. sugar
1 lemon, juice and rind
3 eggs
Pinch of salt (about 1/4 tsp.)

Beat egg yolks with 1/2 cup sugar and butter, size of walnuts. Add lemon juice and grated rind. Cook over hot water until thick, about 10 minutes. Set aside and beat the 3 egg whites. Add 1/2 cup sugar and beat. Fold in lemon crust. DO NOT BEAT IT IN! Put in pie shell and bake 25 minutes at 275 to 300 degrees.
