PEPPER STEAK 
1 1/2 lb. round steak, cut in strips
4 tbsp. soy sauce
1 can beef broth (1 1/2 c.)
1 1/2 c. green pepper, cut in strips
2/3 c. onion, cut in chunks or rings
2/3 c. celery, cut in chunks
2 lg. fresh tomatoes, cut in wedges
1 pkg. noodles or 1 pkg. beef flavored rice
1 tsp. minced garlic
Salt and pepper to taste

Roll steak strips in flour and brown in 3 tablespoons cooking oil. Add salt, pepper and garlic to taste and then add beef broth; simmer over low flame 1 to 1 1/2 hours. Add green pepper, onion and celery; cook another 10 to 15 minutes. (Cook longer if you prefer vegetables not as crisp.) Just before removing from stove, add tomato wedges and serve over cooked rice or noodles.
