GINGER PICKLES 
5 lbs. mature yellow ripe cucumbers, seeded & peeled

Cut up in strips 1/4 inch thick and 1 to 2 inches long. Soak 24 hours in lime water (3 cups lime to 2 gallons water).

Wash well and soak in alum water (1/4 cup to 2 gallons water) for 3 hours. Drain but do not wash. Soak 6 hours in ginger water (1/2 cup powdered ginger to 2 gallons water), drain but do not wash.

5 lbs. sugar
3 pts. vinegar
2 pts. water
1/2 box pickling spice
Few pieces ginger tied in a bag

Add cucumbers and boil until clear. Pack in jars and seal. Process at simmering temperature for 15 minutes.
