6 tbsp. butter/marg 1/3 c. finely chopped onion 2 tbsp. finely chopped parsley 1 c. raw regular white rice 1 pkg. frozen peas (10 oz.) 1 tsp. salt 2 tbsp. grated parmesan cheese In heavy 3 quart saucepan sauté onion and parsley in 4 Tbsp. of butter for 5 minutes. Add rice, sauté, stirring occasionally, 5 min. Add 2 cups water. bring to a boil, or until liquid is all absorbed. Meanwhile, cook peas as pkg. directs. Drain well. Stir peas, salt, and remaining butter into rice. Turn into serving dish. Sprinkle top with grated parmesan cheese. Makes 6-8 servings. |
