HEARTY BROCCOLI CHOWDER 
2 c. raw carrot, grated
2 c. water
2 c. chopped chicken or turkey
2 (10 oz.) pkgs. frozen chopped broccoli
1/2 c. chopped onion
1 tsp. salt
Pepper to taste
1/2 c. flour (approx.)
2 c. milk
1 1/2 c. cubed Muenster cheese

Combine the first seven ingredients in a four quart saucepan or Dutch oven. Bring to a boil over medium high heat; reduce heat, cover and simmer about 10 minutes.

Bring to a full rolling boil. Gradually add flour, stirring constantly. (The entire 1/2 cup may not be needed. Flour is for thickening.) Stir in milk. Simmer, stirring occasionally, about 10 minutes. Add pepper to taste.

Remove from heat and stir in cheese. Cover and let stand 3 to 5 minutes before serving.

Makes about 6 (1 cup) servings.
