ZUCCHINI RELISH 
10 c. chopped zucchini
2 c. chopped peppers
4 c. chopped onions
3 tbsp. salt
2 hot peppers, chopped (optional)
2 c. vinegar
4 c. sugar
1 tsp. celery seed
1 tsp. turmeric
1 1/2 tsp. black pepper
2 1/2 tbsp. cornstarch

Mix together zucchini, peppers, onions, and salt. Let stand 4 hours. Drain, squeezing juice out, but not dry. Combine remaining ingredients; bring to boil; add relish and let boil 5 minutes. Put in jars and seal. Makes 6 pints.
