BARBARDOS RUM SAUCE 
4 tbsp. dark brown sugar
4 tbsp. butter
1 egg, lightly beaten
4 tbsp. dark rum
Pinch of nutmeg

In a bowl, cream together sugar and butter. Beat in egg, rum and nutmeg. Pour into a small, heavy saucepan and stir over low heat until mixture is well blended and thickened, about 1 minute. Yields: about 2/3 cup.
