1/2 c. butter, softened 1/4 c. brown sugar, packed 1 c. all purpose flour, not self rising 1/2 c. chopped pecans 1/2 gallon vanilla ice cream, softened 1 (21 oz.) can cherry pie filling 2 tbsp. rum flavoring, if desired but strongly recommended Heat oven to 400 degrees; mix butter, brown sugar, flour, and pecans with hands. Press mixture evenly in bottom of baking pan (9 x 9 x 2). Bake about 12 minutes or until lightly brown. Crumble with spoon; cool. Reserving 1 cup of the crumbs, press remaining crumbs evenly in pan. Sprinkle reserved crumbs on top. Freeze until firm. Just before serving, heat pie filling and rum flavoring together; spoon onto each serving. 9 servings. |
