BANANA BREAD 
1 3/4 c. flour
1 1/2 c. sugar
1 tsp. baking soda
1/2 tsp. salt
2 eggs
1 c. mashed bananas (2 ripe ones)
1/2 c. vegetable oil
1/4 c. plus 1 tbsp. buttermilk
1 tsp. vanilla
1 c. chopped nuts (optional)

In a large bowl stir together flour, sugar, baking soda and salt. In another bowl combine eggs, bananas, oil, buttermilk and vanilla; add to flour mixture stirring just until combined. Fold in nuts if used.

Pour into a greased and floured 9 x 5 x 3 inch baking pan or 2 smaller ones. Bake at 350 degrees about 1 hour or until bread tests done. Cool on wire rack. Best after in the refrigerator a few days.
