BAKED SPINACH 
2 cans (15 oz.) spinach or 2 boxes frozen spinach
6 to 8 tbsp. butter, melted in saucepan

Drain spinach and save liquid.

Add 2/3 cup flour and stir until smooth. Stir in slowly, liquid and milk to make 2 1/4 cups until smooth, then cook until thick. Add drained, chopped spinach and mix well. Add:

3 beaten eggs
1 1/2 tsp. salt
1 tsp. sugar
1/8 tsp. pepper

Mix well. Pour into buttered casserole. Bake uncovered 1 hour at 300 degrees.
