MICROWAVE PEANUT BRITTLE 
1 c. sugar
1/2 c. white corn syrup
1 c. roasted salted peanuts
1 tsp. butter
1 tsp. vanilla
1 tsp. baking soda

In 1 1/2 quart glass dish mix syrup and sugar. Microwave on high for 4 minutes. Add peanuts and microwave on high for 3 to 5 minutes until light brown. Add butter and vanilla. Blend well. Microwave on high 1 to 2 minutes. Peanuts will be lightly browned. Add soda, stir until light and foamy. Pour on lightly greased cookie sheet. Let cool 1/2 to 1 hour, then break into pieces.

Since microwave ovens vary in power, you may need to adjust your cooking time.
